And Dad... the kids can help make this breakfast - it's so easy!
About the recipes . . . These days there are many do-ahead recipes for breakfast casseroles. This recipe is one of the tastiest I've tried so far. You can buy the packaged diced ham in the meat department of your grocery store. Make it the night before and bake it the next morning. The Scrambled Egg Muffins are a "fun food" but very nutritious. The Oven-Baked Hash Browns recipe is a "tried and true" favorite of mine. I've used this recipe for years for church breakfasts.
The Cinnamon Sticky Buns are delicious and so easy to make. (The kids can help with this one.) Serve your breakfast with the Tropical Cooler Smoothie (recipe available at below) or milk, orange juice and coffee and there you have it. A delicious and easy meal to prepare that Mom will appreciate and remember forever! Oh, and don't forget to clean up the kitchen for Mom!
DO-AHEAD BREAKFAST BAKE
1/2 tsp salt
4 eggs
3 cups milk
1 cup baking mix
1 cup diced fully cooked ham (6oz)
2 cups hash brown potatoes
1 cup green bell pepper (chopped)
1 tbs instant onion (chopped)
2 cups shredded cheddar cheese (8oz)
Spray bottom and sides of rectangular baking dish (13X9X2") with cooking spray (or grease dish). Mix ham, potatoes, bell pepper, onion and 1 cup of cheese. Spread in baking dish.
Stir milk, baking mix, salt and eggs until blended. Pour over potato mixture. Sprinkle with remaining 1 cup cheese. Cover and refrigerate at least 4 hours but no longer than 24 hours.
Heat over to 375 degrees. Uncover and bake 30-35 minutes or until light golden brown around edges and cheese is melted. Let stand 10 minutes before cutting.
Servings: 12
OVEN-BAKED HASH BROWNS
1 bag
frozen hash browns-southern style (30 oz., thawed)
1 can cream of chicken soup (10-1/2 oz.)
2 cups sour cream
2 cups cheddar cheese (shredded)
1/2 cup onions (chopped)
1 tsp salt
1 tsp pepper (or season to taste)
3/4 cup butter (melted)
2 cups corn flakes (crushed)
Mix together in large bowl the hash browns, Cream of Chicken Soup, sour cream, cheese, onions, salt, pepper, and 1/2 cup of melted butter. Spread mixture into lightly-greased 13X9X2" baking dish.
In a small bowl, combine the remaining 1/4 cup melted butter and crushed corn flakes and top mixture evenly. Press down slightly. Bake at 350 degrees for one hour.
Servings: 15 to 20
CINNAMON STICKY BUNS
2 tubes
large refrigerated biscuits (17.3oz each)
1 cup pecans (coarsley chopped)
1 cup brown sugar (packed)
1/2 cup butter or margarine
2 tbs ground cinnamon
1/2 cup granulated sugar
1/2 cup corn syrup
In a saucepan, combine
the brown sugar, corn syrup and butter; cook and stir until sugar is dissolved;
do not boil. Remove from heat and add pecans. Spoon
into a greased 13X9X2" baking dish.
In a shallow bowl, combine granulated sugar and cinnamon. Cut each biscuit
in half; dip in sugar-cinnamon. Place, cut side down, over brown sugar mixture.
Bake at 375 degrees for 25-30 minutes or until golden brown. Invert onto
a serving plate; serve warm.
Servings: 12 to 16
SCRAMBLED EGG MUFFINS
1/2 tsp salt
12 eggs
1/4 tsp pepper
1/4 tsp garlic powder
1/2 cup onion (chopped)
1/2 lb bulk pork sausage
1/4 cup green pepper (chopped)
1/2 cup cheddar cheese (shredded)
In a skillet, cook the sausage over medium heat until no longer pink; drain grease. In a bowl, beat the eggs. Add onion, green pepper, salt, pepper and garlic powder. Stir in sausage and cheese.
Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees for 20-25 minutes or until a knife inserted near the center comes out clean.
Servings: 1 Dozen
TROPICAL COOLER SMOOTHIE
2 cups orange
juice
4 cups pineapple
chunks (drained)
2 bananas
(coarsley chopped)
1/2 cup milk
1/4 cup honey
2 cups
ice (crushed)
In a blender; combine all the ingredients. Blend until smooth.
Servings: 4
